High Tea has its origins in 19th century England. Anna, the 7th Duchess of Bedford (who was a lady-in-waiting to Queen Victoria) is credited with creating the tradition to overcome that “sinking feeling” during the late afternoon. At the time, it was usual for people to only partake in two meals – breakfast and dinner at approximately 8pm. To overcome her grumbling stomach, the Duchess began to enjoy ‘afternoon tea’ which originally consisted of a pot of tea and a light snack, served in her private rooms during the afternoon.
The Duchess found this new meal so satisfying the she started to invite friends to join her, and the trend was quickly picked up by other social hostesses. The practice eventually became respectable enough to move to the drawing rooms. The simple platefuls of bread and butter that accompanied the first afternoon tea soon developed into much more elaborate selections of sandwiches, scones, muffins, cakes, biscuits, gateaux and fruit desserts.
Traditionally the upper classes would serve a ‘low’ or ‘afternoon’ tea at around 4pm, just before a fashionable promenade along Hyde Park. The middle or lower classes would serve a more substantial ‘high’ tea later in day at 5 – 6pm, instead of an evening meal. The reference to ‘high’ tea was to the height of the table used to serve the tea, which was usually the dinner table.
